healthy Fruit “Caprese” Chiquita Banana Salad Recipe
Slice watermelon into 8 ½-inch slices. Cut a round slice out of each watermelon slice using a 4 to 5-inch round cookie cutter or by cutting around a small round bowl or plate; set aside. Reserve remaining watermelon for another use. Combine sea salt and lemon juice; set aside. Peel bananas and cut each into thin coin-shaped sliced. Place half of the watermelon rounds on salad plates. Top with half of the banana slices. Place remaining watermelon rounds on top of the banana slices. Top rounds with remaining banana slices. Drizzle the lemon juice-sea salt blend over the fruit. Slice the basil into thin ribbons. Garnish the fruit with the basil and serve immediately with additional basil for garnish, if desried.
Makes a fresh, easy side dish to serve with pizza or other Italian food.
Nice with chilled sparkling water.
