Ingredients:

  • 12   dried Plums (dried prunes)
  • 2   Tbsp. Water
  • 2   very ripe Chiquita Bananas, (peels should have brown flecks) mashed
  • 3/4   cup Sugar
  • 1   large Egg
  • 1/2   cup all purpose Flour*
  • 1 1/2   tsp. Baking powder
  • 1/4   tsp. Baking soda
  • 1   tsp. Pumpkin Pie Spice
  • 1/4   tsp. Salt
  • 2   cups Bran flake cereal
  • 1/2   cup chopped Pecans
  • 1/2   tsp. Vanilla

    *Note: whole wheat flour may be used and will yield a denser loaf.

Instructions for best Fiber-Rich Chiquita Banana Loaf Recipe

Preheat oven to 350 degrees F. Grease a loaf pan, spray with non-stick spray or line with non-stick foil. Place dried plums and water in a blender or food processor. Pulse until pureed with just small chunks of fruit. In a large mixing bowl beat together the plum puree, bananas and sugar. Add the egg and beat well; set aside. Stir together the flour, baking powder, baking soda, pumpkin pie spice and salt. Stir the bran flake cereal into the flour mixture and mix well. Stir the banana mixture into the dry ingredients and mix until well moistened. Fold in the vanilla and nuts. Pour batter into prepared loaf pan. Bake for 40 to 50 minutes. Banana bread is done when a toothpick inserted into the center of the loaf comes out clean. Cool before slicing.

Serving Suggestions:
Serve with a bowl of fresh fruit, such as sliced Chiquita Bananas and berries.
