A blend of seasoned brown rice, raisins, Chiquita Bananas and apples stuffed in bell pepper halves and baked.
Ingredients:

large red or green Bell peppers, halved lengthwise and seeded
- 1
ripe, Chiquita Banana, diced
- 1
Green onion, diced
- 1/2
Gala or Red Delicious Apple, peeled, cored and diced
- 1/4 cup
Raisins
- 2 Tbsp.
Orange juice
- 1
(8.5-oz.) pouch pre-cooked, seasoned brown and wild Rice medley (do not heat)
- 1/8 tsp.
white Pepper, optional
- 1
dash of Salt, to taste

Preheat oven to 375 degrees F. Fill a large, deep pan with water and bring to a boil. Place pepper halves in the water and boil for 5 minutes. Drain and set aside. In a large bowl gently toss together the diced banana, green onion, apple and raisins. Add the orange juice and gently stir in the rice medley. Taste; if desired season with white pepper and salt. Stuff the bell pepper halves with the fruited rice. Bake for 20 minutes; serve.
Serving Suggestions:
Makes a great side dish, or double the recipe and serve as a meatless main dish.
Beverage Pairings:
Try with a glass of Madeira wine.
