This simple bread recipe is quick to make and sure to please.

Ingredients:

  • 2   Eggs, beaten
  • 3   very ripe Chiquita Bananas (with brown peels), mashed
  • 1/2   cup Canola oil and additional cooking spray to be applied as needed
  • 1/4   cup Buttermilk
  • 1/2   tsp. Vanilla
  • 1 3/4   cups Flour
  • 3/4   cup Brown sugar
  • 1/4   cup Sugar
  • 3/4   tsp. Baking soda
  • 1/2   tsp. Salt
  • 1   tsp. Cinnamon
  • 1/2   cup walnuts, finely chopped, optional

Instructions for:

Preheat oven to 350 degrees F. In a medium bowl combine all of the “wet” ingredients: eggs, bananas, oil, buttermilk and vanilla. In a large bowl combine all of the “dry” ingredients: flour, brown sugar, sugar, baking soda, salt and cinnamon (and walnuts if using). Stir wet ingredients into the dry ingredients just until all the dry ingredients are moistened. Spray an 8-inch by 4-inch loaf pan with cooking spray then pour banana bread batter into the pan. Bake for 50 to 60 minutes. Bread is ready when a toothpick inserted into the center of the loaf comes out clean. Allow to cool, then remove from pan and slice as needed.

    Made this recipe this weekend, and we loved it. My hubby doesn't care for really sweet things, and he really liked this bread. Good banana flavor but not too sweet. Toasted? Incredible! Can't wait to try all the other versions. Even sent the gluten-free version to my gluten-intolerant sister. :-) Arachne53
