Muffin recipes without yeast started appearing in 19th century American cookbooks after muffins with yeast, also known as "common muffins" were found in much older cookbooks. Most people think of muffins as a cupcake without frosting and as much sweetness.

In the 1970's and 1980's American kitchens, trends in terms of ingredients started to shift as people looked for more healthy options, and simultaneously there was an increase in preservatives in muffin mixes as there was a decline in home-baking.

More recently, home cooks and chefs alike started experimenting with different sized muffin tins, small and large as well as experimenting with more gourmet recipe concoctions.
