Black beans and cotija cheese make a tasty filling for these individual vegetarian Chiquita® Plantain pies.

Ingredients:

  • 2   cup cooked Black beans, drained and mashed
  • 1/4   cup Chunky salsa, hot or mild to preference
  • 4   tsp. Cotija or shredded Parmesan cheese
  • 4   small black Chiquita® Plantains
  •   Non-stick cooking spray (olive oil, butter-flavored or baking)

Instructions for:

Preheat oven to 350 degrees F. Combine the mashed black beans, salsa and half the cheese; set aside. Peel the plantains then use the tip of a teaspoon to remove the seeds in the middle. Mash plantains until smooth. Lightly spray 4 individual 3-oz. ramekins with cooking spray. Divide plantains among the ramekins and pat evenly onto the bottom and up the sides to make a "crust". Fill plantain crusts with black bean mixture and sprinkle with remaining cheese. Bake for 25-30 minutes and serve hot.
