Shredded coconut
- 1/2 cup

Preheat oven to 350 degrees F. Prepare 12 muffin cups with paper liners. Sift the flour, baking soda, baking powder, and salt into a bowl; set aside. In a large bowl, cream together butter and sugar until fluffy. Add the eggs one at a time, mixing well after each, then add the bananas and vanilla extract. Stir in the flour mixture. Fold in the shredded coconut and pineapple; mixing just enough to evenly distribute. Divide the batter among the muffin cups.
