Sweet, juicy peaches and nectarines combine with bananas in this grilled summer dessert that tastes like pie – but is a lot less work.
Ingredients:

(18-inch) sheet heavy duty aluminum foil

Chiquita Bananas, peeled and sliced
- 2 cups
sliced Stone fruit, such as Peaches and/or Nectarines
- 1/4 cup
Brown sugar, more or less to taste
- 1 Tbsp.
Cornstarch
- 1/4 tsp.
Cinnamon, or more to taste
- 1
Dash nutmeg
- 1
Pinch of salt
- 1 1/2 Tbsp.
cold Butter, chopped into small pieces
- 1 oz.
Brandy or dark Rum, optional
- 1
Angel food cake, optional
- 1
Whipped cream, optional

Center the foil over a heat-resistant pie plate. In a large bowl, combine banana and stone fruit slices. Taste the stone fruit and adjust brown sugar amount based on the sweetness of the fruit. Mix together the brown sugar, cornstarch, cinnamon, nutmeg and salt. Toss the brown sugar mixture with the fruit; pour over the foil. Dot with butter. Sprinkle brandy or rum over the fruit if using. Bring edges of foil together and fold edges together to create a packet. Place on a hot grill and cook for about 15 minutes, or until the fruit is soft and the juices are bubbling. Remove from the grill and place the foil packet back in the pie plate. Carefully open the packet as the dessert will be very hot. Serve in individual bowls or spoon over angel food cake slices. Top with whipped cream if desired.
Serving Suggestions: Spoon over vanilla ice cream, pound cake or biscuits. Also makes a tasty topping for hot cereals.
