Instructions for healthy Four Seed Chiquita Banana Loaf Recipe
Preheat oven to 350 degrees F. Spray a loaf pan with nonstick baking spray or line with nonstick foil; set aside. Soak chia seeds in the buttermilk for 10 minutes. Meanwhile in a large bowl combine flour, ground flax seeds, baking powder, baking soda, sugar and poppy seeds; set aside. In a blender mix eggs, then add chia seeds (they will have absorbed the buttermilk.) Peel 2 of the bananas, break into chunks and add to the blender. Blend until it looks like a smooth puree. Dice remaining banana and set aside. Add the banana and egg mixture to the dry ingredients in a large bowl and stir to combine. Fold in diced banana. Place the batter into the prepared loaf pan and sprinkle top of the batter with sunflower seeds. Bake in the center of the oven for about 30 to 35 minutes. A toothpick inserted in the center of the loaf will come out clean with a few moist crumbs or seeds when done. Remove from oven and cool before slicing. To store wrap tightly in foil or plastic wrap.
