A lovely combination of sweet and savory, this vegetarian main dish is easy to make and one that kids will love as well. This is a great recipe for ripe bananas.

Ingredients:

  • 1/4   cup butter
  • 6   ripe Chiquita Bananas
  • 1   Tbsp. Olive oil
  • 1   cup finely diced White onions
  • 2   (12-oz.) pkg. Meatless grounds (soy ground beef substitute)
  • 1   (6-oz.) can Tomato paste
  • 1   Tbsp. Cumin
  • 1   tsp. Salt
  • 1/2   tsp. Pepper
  • 2   cups shredded Cheddar cheese
  •   Optional toppings: avocado, lime, cilantro, sour cream, hot sauce

Instructions for:

Preheat oven to 400 degrees F and grease a 9 × 13-inch baking dish. In a large frying pan, melt butter and mash bananas, and cook for 10 minutes. Spread into prepared baking dish. In the same frying pan, add olive oil and fry onions until lightly brown. Add meatless grounds and tomato paste. Season with cumin, salt and pepper. Cook for 10 minutes. Layer sauce on top of bananas in baking dish. Add a layer of shredded cheddar cheese on top. Cover with aluminum foil and cook for 45 minutes. Remove foil and cook for 5 minutes more.     Yuk! The bananas would be better exchanged for some lasagna noodles or plantains (perhaps Chiquita also distributes plantains?).
