Bananas and walnuts up the fiber ante in these bran muffins. Great for breakfast, snacks or a healthy dessert. The crumble on top makes them an especially unique bran muffin. Try making our Chiquita Banana Bran Muffin recipe today.

Ingredients:

  • 2/3   cup Butter, room temperature
  • 5   whole Chiquita Bananas (with brown flecks on peel)
  • 1   cup Brown sugar
  • 2   whole Eggs
  • 1   tsp. Vanilla extract
  • 1   tsp. Baking soda
  • 1   tsp. Salt
  • 1   cup All-purpose flour
  • 1   cup Unprocessed bran
  • 1   cup Walnuts or almonds, chopped
  • 1   whole Chiquita Banana, sliced and coated with honey (Crumble)
  • 1   cup Oats (Crumble)
  • 1   Tbsp. Brown sugar (Crumble)
  • 1/2   cup Walnuts or almonds, chopped (Crumble)
  • 1/2   cup Butter, melted (Crumble)

Instructions for:

Preheat oven to 350 degrees F and grease muffin pan. In a mixing bowl, combine butter and Chiquita Bananas and mix on medium speed until mixture is smooth. Add sugar, eggs, vanilla, baking soda and salt to batter and mix on medium for 1 minute. Scrape bowl then add flour to batter and mix for 1 minute. Add bran to batter and mix for 1 minute. Add nuts to batter and mix for 30 seconds. Pour batter in muffin pan. Mix all 'Crumble' ingredients in a separate bowl and sprinkle on top of batter in muffin pan. Bake for 25 - 30 minutes and cool on rack.

    A few changes: I added 1/3 c ground flax to boost the fiber, decreased the br sugar to 3/4, used oatmeal instead of bran, and left off the crumble topping. Wonderful and moist. Next time I will decrease the butter, though. And cut the br sugar to 1/2c. Will definately make this one again.
